Long before Chef Umberto Pala was hosting private dinners in Puerto Morelos, he was a teenager working in kitchens in Northern Italy, learning the pace, discipline, and culture of cooking from the inside out.

Chef Umberto's Story

Born in Bergamo, Italy, Umberto began cooking professionally at just 14 years old while attending culinary school. At the time, it wasn’t part of some carefully planned career path — it was simply the environment he naturally gravitated toward. His cousin had entered the culinary world first, and before long Umberto found himself fully immersed in it as well.

What began in Italian kitchens eventually became a career that would span nearly four decades.

After spending close to 10 years cooking throughout Italy, Umberto moved to California in the mid-1990s following a job opportunity in Orange County. From there, he continued building his experience across restaurants in Southern and Northern California, working in everything from Italian restaurants and upscale dining environments to large restaurant groups and hospitality operations.

Over the years, he opened and operated his own restaurants, bars, and breweries while continuing to expand both his culinary range and his understanding of hospitality itself.

While Italian cuisine remains deeply rooted in his background, years spent working alongside cooks and chefs from different cultures shaped the way he approaches food today. Instead of limiting himself to one style of cuisine, he became fascinated by flavor, technique, and the challenge of recreating the kinds of dishes and experiences people genuinely connect with.

That curiosity still drives much of what he does.

Why Puerto Morelos

Like many people who eventually settle in Puerto Morelos, Umberto and his wife Sharlene originally came to the area on vacation years ago and immediately fell in love with it.

After decades of restaurant ownership and the nonstop demands of the industry in California, the slower pace and more personal atmosphere of Mexico offered something different. Rather than opening another traditional restaurant, Umberto began experimenting with private dinners and themed pop-up events almost as a creative outlet — a way to cook freely, connect directly with guests, and create experiences that felt more personal than a standard restaurant service.

Over time, word spread.

Guests began rebooking dinners every time they returned to town. Travelers recommended him to friends. Pop-up dinners grew into local favorites. What started organically eventually became the foundation for the private chef experiences he offers today throughout Puerto Morelos and the Riviera Maya.

Cooking Without A Fixed Formula

One of the things that separates Chef Umberto from many private chefs is his refusal to approach dinners as pre-packaged experiences.

Rather than handing guests a rigid menu to choose from, most dinners begin with a conversation. He wants to know what people enjoy eating, how they like to dine, the atmosphere they want to create, and whether the evening should feel elegant, relaxed, interactive, family-style, celebratory, or intimate.

From there, the menu often comes together around the freshest ingredients available at the market that week.

Some evenings may lean heavily into handmade pasta and Italian comfort food. Others may revolve around fresh seafood, slow-braised meats, Mediterranean flavors, Asian influences, or completely different culinary inspirations. For larger events, menus are often planned further in advance, while smaller dinners sometimes evolve naturally from what looks best that day.

For Umberto, that flexibility is part of what keeps cooking exciting after so many years.

That philosophy extends into his themed pop-up dinners as well — communal multi-course events where strangers often leave feeling like old friends after spending an evening sharing food, wine, and conversation around the same table.

For Chef Umberto, hospitality has never been only about feeding people.

It’s about creating a unique, unforgettable experience people carry with them long after the evening is over.
